So I am laying on my couch, laptop in front of me, feeling very reflective and thoughtful, especially considering what time it is...almost 12:30am. I'm thinking, I may type a post up about some random thoughts I am having. Then, I prop my head up on my elbows. I feel something, and I realize there are crumbs all over my couch from my husband eating tortilla chips. I am all itchy and can't seem to get all the crumbs off the couch. So much for feeling thoughtful and inspired...good night!

Yummy!

Ambrosia Oatmeal Chocolate Chip Cookies
Ingredients:1 cup butter or margarine, softened1 cup brown sugar1/2 cup sugar1 teaspoon vanilla2 eggs2 cups flour1/2 teaspoon salt2 teaspoons baking powder2 cups quick oats1 package (12 oz. size) chocolate chips
Directions:
Heat oven to 350. In a large mixing bowl, cream butter and sugar until light and fluffy. Mix in eggs and vanilla. Sift together flour, baking powder and salt. Add to creamed mixture. Blend thoroughly. Stir in quick oats and chocolate chips; mix well. Drop by tablespoons onto ungreased cookie sheets. Bake 10-12 minutes. Cool one minute before removing from cookie sheet and placing cookies on cooling rack.
Hot Breakfast Couscous
*we will be making this at the campsite*
2 cups skim milk 1/3 cup dried, chopped apricots
2 tablespoons honey 1/3 cup raisins or dried cranberries (we prefer cranberries)
3 tablespoons ground cinnamon 1/2 cup slivered almonds
2 cups dry couscous
In a saucepan over medium heat, combine the milk, honey, and cinnamon. As soon as it comes to a boil, stir in the couscous. Turn off the heat, cover and let stand for 5 minutes. Stir in dried fruit and almonds.
Herb Oyster Crackers
2 (12 oz) packages oyster crackers
1 (1 oz) package ranch dressing mix
1/2 tsp dried dillweed
1/2 tsp garlic powder
1/2 tsp lemon pepper (I substituted paprika, cuz I don't like lemon pepper very much)
1 cup vegetable oil
Place crackers in a large plastic bag. Season with dressing mix, dill weed, garlic powder and lemon pepper. Pour in the oil, close bag and shake vigorously until the crackers are covered with seasoning.

We are back from Moab! It was so much fun! But so stinkin' hot! And pretty much no shade. Lots to do tonight...unpack and get the house ready (stuff off the walls, move furniture away from walls) for the painters who are coming in tomorrow to finally take care of an insurance claim we made last fall from a roof leak!

I saw the funniest thing on the internet today. Or maybe I'm just weird, but I was particularly amused by it. The girl I was working with got a sunburn. She said she really didn't want to peel. So we were looking up cures for sunburns. One page had a few pointers listed as follows:
- Resist the temptation and don’t pick at the skin. Allow the dead skin sheets to detach on their own. (did anyone else cringe at "dead skin sheets"? Ewwww!!!)
And now, the funny part. Point #2 was:
- Consider covering up with clothing to stop other people from picking at your peeling skin.
AHHHH! So gross! Is that really a problem? Like if I'm peeling and I'm walking through a store wearing a tank top, are random people going to be picking at my peeling skin??? LOL!!! That's disgusting!

So, I have been so tired and worn out all week. And then, yesterday I heard something I really wish I hadn't heard at work. I am feeling really underappreciated and underestimated and I don't like it. I just crashed last night. I was soooo tired. And, I slept for 13 hours!!!! It was wonderful and I feel great now. I don't really want to do anything today, but I feel rested and its nice!!!

It was a good weekend! On Saturday I went shoe shopping with my good friend, Amy. I found a pair of brown heels to wear with that cute brown dress I have. I also got a pair of Teva flip flops for $7!!! Yay! I love a deal! Then, I went grocery shopping, did laundry, and took a nap until James got home from work. So domestic.

Chocolate...

I got a new cell phone and it makes me way more excited than it should. I hate to admit it, but I've been a little obsessed with it lately! Its the LG Strawberry Chocolate and its the coolest thing ever.
